Siggi Tschurtschenthaler loves his job. Cooking is a passion for him. The young South Tyrolean grew up on a farm with a mountain inn in Rodeneck in the Puster Valley. He was already in the kitchen at the age of ten, helping his mother - an excellent cook from whom he learnt a lot.
With the best chefs in Europe
After completing his cookery apprenticeship, Siggi Tschurtschenthaler gained several years of experience working with the best chefs in Europe: for example with chef of the century Eckart Witzigmann in Munich, at Hangar 7 in Salzburg, with Dieter Koschina at Vila Joya in Portugal - one of the top 50 restaurants in the world - and at Tubladel in Val Gardena, for which Siggi Tschurtschenthaler was awarded a top spot in Italy's renowned gourmet guide Gambero Rosso.
Because cooking is fun
Siggi Tschurtschenthaler is both chef and owner (together with his partner Melanie) of the historic Restaurant Adler in Fläsch, which he has been running since November 2014. There, the young top chef sets his own accents and surprises again and again with classic specialities, which he prepares in a playful yet surprisingly simple and straightforward manner.
Siggi's recipe for success? Take 40 per cent pleasure, add 30 per cent dreams, spice it up with 10 per cent exuberance and flavour it with 30 per cent gratitude. The result is a wonderful dish - prepared with 110 per cent joie de vivre and passion. You can see, taste and feel that he really enjoys cooking.

Melanie – Hostess
Start the day with a smile and end it with champagne.
Anyone who has ever attended a wine tasting with Melanie at the Adler has fallen for her passion for wine. There are few sommeliers who have so many stories to tell about the winegrowers and/or wineries in addition to the delicious wines from the Bündner Herrschaft region and beyond. ‘For me, the most important thing, apart from a good bottle of wine, is to know the winemaker and his or her philosophy and history, for example, what inspires him or her to complete such a work’.
The former private banker and bank manager has found her passion in wine. ‘Working with these percentages is just so much more fun!’
And – there is quite a lot of wine in this world. Trying them all is a task that takes several lifetimes! And one of them starts right here at the Adler! We hope we can inspire you in the same way!
